- 3 eggs
- 50g fresh spinach
- 50g fresh cheese (queso fresco or ricotta)
- 1 tablespoon olive oil

Preparation
- Wilt the spinach: In a non-stick pan over medium heat, add a little olive oil and the spinach. Cook 1–2 minutes until wilted. Season with salt and pepper. Set aside.
- Beat the eggs: Crack eggs into a bowl, season with salt and pepper, and beat well until uniform.
- Cook the omelette: In the same pan over medium heat, pour in the eggs. After 30 seconds, add the spinach and crumbled fresh cheese. Cook 2–3 minutes, folding when set.
- Serve: Slide onto a plate and eat immediately for the best texture.
